We realise that ‘healthy’ and ‘cookies’ don’t often go in the same sentence, let alone chocolate chip cookies! Nutritionist Jessica Giljam-Brown (Wellness By Jessica) however, has made it happen. We promise there’s no nasties in this recipe – they are gluten, dairy, refined-sugar and guilt free – not to mention delicious.
Ingredients
- 4 cups of almond flour (ground almonds)
- 1 tsp of sifted baking soda
- 2 cups of dark chocolate chips
- Pinch of sea salt
- 1/2 cup of melted coconut oil
- 1/3 cup of maple syrup
- 2 tsp of apple cider vinegar
- 1 tsp of vanilla paste (or 2 tsp of vanilla extract)
Method
- Pre-heat the oven to 180 ̊C Fan Bake, line two trays with If You Care Baking Paper
- In a large mixing bowl, combine the dry ingredients (almond flour, baking soda, choc chips, sea salt)
- Prepare the wet ingredients (maple syrup, coconut oil, vanilla, ACV) and pour them over the dry ingredients
- Mix well with a wooden spoon
- Roll the mixture into small balls, and press them onto the baking trays so they are not touching
- Bake for 12-15mins
- Once removed, try and resist them until they have cooled down (if you can!), they are very soft after baking
- Store in an airtight container
Tip: if you’ve melted your coconut oil before mixing it in, then the choc chips might melt a little bit making the mixture darker and more chocolatey – if you’re not into that, then mix the choc chips in last instead.
